<p><span style="color: #993300;">This was one of my parents favorite meals when they visited Japan.  &#8221;This yaki-stuff is delicious and it fills you up completely!&#8221;  My Dad said with great big smile and sauce all over his face!  (Must admit it is one of my favorites too!)</span></p>

<p><span class="Apple-style-span" style="color: #993300;">A tasty &#8220;pancake/crepe&#8221; contains a variety of flavorful ingredients made to order to your liking!  The name comes from the word okonomi, meaning <em>&#8220;what you want</em>&#8220;, and yaki means &#8220;grilled&#8221; such as yakitori (grilled chicken) and yakisoba (grilled soba noodles).</span></p>
<p><span style="color: #993300;">Okonomiyaki is associated with two major cities; Osaka and Hiroshima, however it can be found anywhere in Japan.   Toppings and batters tend to vary a little, however this blog entry will show you step-by-step in how it&#8217;s made <em>Hiroshima style</em> &#8211; which happens to be my favorite!</span></p>
<p><span style="color: #993300;">In Hiroshima, the ingredients are layered rather than mixed all together like the Osaka style (see picture below), very simliar to an omelette.</span></p>

<p><span style="color: #993300;">The layers are typically batter, cabbage, pork/bacon, and optional items such as shrimp, squid, octopus, and cheese.   Noodles, you can choose from two types; soba (thin noodles) or udon (flat and thicker).  To top it all off a yummy fried egg and a generous amount of okonomiyaki (barbeque) sauce and sprinkle of aonori (seaweed) flakes.  </span></p>

<p><span style="color: #800000;">Hidden around the side of a wonderful smelling restaurant called Osamurai-jaya Hikoemon お侍茶屋　彦右衛門,  you will find a cute waffle stand called &#8220;Setono Hanayome Taiyaki.&#8221;</span></p>

<p><span style="color: #800000;">The Japanese dessert menu is simple and easy to understand.  There were several different flavors to choose from such as Mango Cream, Vanilla Custard, Chocolate Mousse, Fresh Fruit Mixed and Strawberry with Cream &#8211; which they were all sold out of!  I guess it&#8217;s a favorite with the locals.</span></p>

<p><span style="color: #800000;">A little more information about Osamurai-jaya Hikoemon &#8211; the restaurant opened this year (2010) and there are three sections to enjoy;  a traditional Japanese restaurant, dessert stand, and a small omiyage gift shop.  I didn&#8217;t get a chance to visit the restaurant (my focus on this hot day was desserts!) but I could smell their famous curry udon soup!  What an incredible aroma!  I will return in the near future and enjoy ordering from their wonderful menu, can&#8217;t wait for that!  More to come! </span></p>

<p><span style="color: #000080;">The various noodle dishes that are popular in Japan are another culinary experience that shouldn&#8217;t be missed.  Ranging from the familiar ramen-style noodles, to the Japanese udon noodle which is much thicker; you&#8217;ll find that noodles are prepared in many delicious and interesting ways. There are also fried noodle dishes such as yakisoba, which is an absolute favorite for many Americans.  This popular dish is generally served with a vegetable and meat combination, along with a a tangy brown sauce.  Also okonimiyaki is another foreigner favorite, I know it was for my parents when they visited Japan!  It is served in two ways; Hiroshima style (layered like a light pancake omlette &#8211; personal favorite) or Osaka style (all mixed up together like a giant western omlette). </span></p>
<p><span style="font-size: 80%;"><span style="color: #000080;">いろいろな種類の麺類にチャレンジしてみることも、外せない美味しい経験ですね。ラーメンのようなスタイルの麺から少し太めのうどんのような麺、いろいろな調理方法で調理されます。また、多くのアメリカ人の大好物「焼きそば」のような炒めた麺料理もあります。焼きそばは野菜、肉、麺を炒めて少し濃い目の茶色いソースで味付けをします。「お好み焼き」も外国人に好まれるものの一つですね。うちの両親も大好きです！調理方法には広島風（クレープのような生地の上に具材を重ねるもの）と大阪風（生地と具材をすべて混ぜて焼くもの）の２種類があります。</span></span></p>

<p><span style="color: #800000;">There&#8217;s nothing like going out with my husband and friends for a delicious night of sushi.   Whether it&#8217;s a fancy restaurant or a &#8220;Sushi-Go-Round&#8221; (as the kids would say) you should learn the basics about this wonderful treat.</span></p>

<p><span style="color: #800000;"><em>Are you NEW to eating sushi?   Have you ever wanted to try it, but were not sure where to start or what you might like?</em> I was thinking (a Jersey gal who ate Bumble  Bee  tuna from a can)  if I&#8217;m going to live in Japan I need to learn how to eat differently.   Healthwise, sushi is packed with protein, dense with nutrients, and often low in fat &#8211; sushi is an excellent way to enjoy a meal regardless of one&#8217;s dietary lifestyle choice.   <em>So far -so good?</em></span></p>
<p><span style="color: #800000;">First step is to start with what you already know when it comes to seafood.  Sushi is not that different from eating any fish, it&#8217;s just not cooked.  Okay, try not to think of it like that&#8230;stay with me.</span></p>
<p><span style="color: #800000;">Do you like salmon (sake in Japanese)?   How about calamari (ika) or shrimp (ebi) ?   The two main differences are taste and texture.  Texture wise, it is just a little softer, which will not stand out that much when you eat it with rice.</span></p>

<p><span style="color: #800000;">Let me introduce to you some very <span style="text-decoration: underline;">basic</span> information, the idea is to give it a try and enjoy eating sushi as a beginner.   On a later blog I will explain the different styles of sushi &#8211; sashimi, nigiri, and maki.   Then we can talk about etiquette because there are a few rules to follow as well.   Who knows maybe I&#8217;ll even make a video on the subject?</span></p>
<p><span style="color: #800000;">An old friend passed this terrific diagram/tip to me when I arrived many years ago&#8230;maybe this can come in handy for you!  If you are new to chopsticks keep a plastic fork with you until you learn&#8230;.</span></p>

<p><span style="color: #800000;">I know that everyone has different tastes and there is definitely no single way to approach sushi if you are new to it.   Stay at your comfort level don&#8217;t get pushed into trying something exotic, I wish for you to enjoy the unique experience and not turn it into a gross nightmare.    Start by finding a fun place to eat, go at your own pace, cold beer helps, and hopefully sushi will grow on you as it did for me.</span></p>

<p><span style="color: #800000;"><em>Food for thought</em> &#8211; My Dad would say, always try something &#8220;3 times&#8221; before declaring that I didn&#8217;t like it.  It has worked for me pretty much every time and I can&#8217;t think of a food that I cannot appreciate.  Now I pass on the philosophy to my children.   You may not turn into a sushi fanatic overnight, but there is a lot to appreciate about sushi and Japanese food in general. </span></p>

			<content:encoded><![CDATA[<p><span style="color: #800000;"><em>Baby it&#8217;s cold outside!</em>   American friends ask me what is a favorite Japanese cuisine during the winter season and what&#8217;s a recipe that is easy to prepare?    Let&#8217;s start with one of the favorites, Japanese comfort food, Sukiyaki and Torisuki. (Kanto関東, East Japan style Sukiyaki)   </span></p>
<p><span style="color: #800000;">The Japanese enjoy simmering meats, vegetables, and tofu together for a delicious and tasty meal.   Sukiyaki  is prepare with thin sliced beef and Torisuki with chicken, preferrably dark meat.   It&#8217;s one of the most popular and well-know one-pot recipes called &#8220;nabemono&#8221; in Japan.  This simple and flavorful meal is usually fixed right at the dinner table.   People gather and help themselves to the meat and vegetables in a large shallow frying pan or large ceramic covered bowl called a &#8220;donabe&#8221;.   As the ingredients are taken from the pan, more is added, and the cycle continues until everyone is full (ippai).   Hot winter meals will never be the same.   Enjoy!</span></p>
<p><span style="color: #800000;">* During the winter season you will be able to find prepacked Sukiyaki broths sold in many grocery stores.  Check around the vegetable section.  Sells about Y300  &#8211; I love trying new flavors!</span></p>

ここで紹介するのは、関東風のすき焼きと鳥すき。日本ではお肉と野菜、それから豆腐がおなべで煮て食べるのを楽しんでるわ。すき焼きは、薄切りの牛肉を、鳥すきはチキンでと何を使うのかってだけの差しかないの。これは日本の「鍋物」の一種。晩ご飯のテーブルで作っちゃうのよ。みんなで集まって、自分の食べたいものをそれぞれ選んで、浅めのフライパンや、土鍋にどんどんいれる。そして直接お鍋から食べたいものをとる。なくなったらまた継ぎ足す。これをおなかいっぱいになるまで繰り返すの。冬の鍋物にはいろんなものがあるわよ。お楽しみあれ！<br />

<li><span style="color: #800000;">1 to 1 1/2 pounds rib-eye of beef thinly sliced or chicken, cute into bite size pieces</span></li>
<li><span style="color: #800000;">1 12 ounces block firm tofu, cut into 1-inch cubes (add more for a vegetarian style)</span></li>
<li><span style="color: #800000;">1 Tablespoon oil</span></li>
<li><span style="color: #800000;">1/2  Tablespoon sesame oil</span></li>
<li><span style="color: #800000;">1 bunch, about 6, scallions, cut into 2-inch wide pieces</span></li>
<li><span style="color: #800000;">1 bag of shirataki noodles  (clear, lowcarb noodles) or soba, however they <em>will soak up</em> a lot of the juices</span></li>
<li><span style="color: #800000;">1 onion, slice thick</span></li>
<li><span style="color: #800000;">2 carrots, sliced</span></li>
<li><span style="color: #800000;">1/2 thickly sliced Chinese cabbage</span></li>
<li><span style="color: #800000;">1 8 ounces can sliced bamboo shoots, rinsed under cold, running water (optional)</span></li>
<li><span style="color: #800000;">1 cup sliced fresh mushrooms</span></li>
<li><span style="color: #800000;">1 cup soy sauce</span></li>
<li><span style="color: #800000;">1/4 cup mirin</span></li>
<li><span style="color: #800000;">2 Tablespoon sugar (optional)</span></li>
<li><span style="color: #800000;">1 1/4 cups water</span></li>
<li><span style="color: #800000;">Black pepper</span></li>
<p><span style="font-size: small;"><span style="color: #800000;">【材料】<br />
・薄切り牛肉、または鶏肉を一口大に切ったもの　４５０ｇ　～６７５ｇ<br />
・豆腐　１丁（２．５ｃｍくらいに切っておく）ベジタリアン・スタイルにする場合は多めにしてね。<br />
・油　大さじ１<br />
・ごま油　大さじ1/2<br />
・ねぎ　１把　５ｃｍくらいにざく切り<br />
・しらたき　１袋　（そばでもいいけど、出汁を吸いすぎるのであまりオススメじゃないわ）<br />
・白菜　1/2個　ざく切り<br />
・（お好みで）タケノコの水煮　約５００ｇ　洗って水気を切っておく<br />
・きのこ類　カップで１杯分くらい<br />
・しょう油　２４０ｃｃ<br />
・みりん　　　６０ｃｃ<br />
・砂糖　　大さじ２～３<br />
・水　　　　３００ｃｃ<br />
・黒こしょう　少々<br />
※私は薄くスライスしたにんじんとか、たまねぎ、もやしなど、もっと野菜を入れてるわ。</span></span></p>
<p><span style="color: #800000;">Directions:【作り方】</span></p>
<li><span style="color: #800000;">Mix soy sauce, sugar, water, and mirin together in a bowl.   Set aside.<br />
しょう油、砂糖、水、みりんをあわせておく。</span></li>
<li><span style="color: #800000;">Slice beef very thinly, if meat is slightly frozen, it is much easier to cut.<br />
冷凍のブロック牛肉の場合は、切れるようになるくらいまで解凍して、薄切りにする。</span></li>
<li><span style="color: #800000;">Heat oils in frying pan, saute beef or cook your chicken for a few minutes.  Push aside to one side of the pan or bowl.<br />
フライパンで油を熱して、牛肉（若しくは鶏肉）を２～３分炒める。あらかた火の通った肉をフライパンや鍋の端に寄せておく。</span></li>
<li><span style="color: #800000;">Add scallions, shirataki noodles, bamboo shoots, mushrooms, and tofu. (plus any other vegetables)<br />
ねぎ、しらたき、たけのこ、きのこ、とうふ（プラス入れたい野菜があればそれも）を入れる。</span></li>
<li><span style="color: #800000;">Pour sauce over meat and vegetables until they are half covered.   Adjust heat so that sauce simmers.<br />
ソース（わりした）を具の半分がかくれるくらいまで注ぎ、火を弱める。</span></li>
<li><span style="color: #800000;">Cover, check after about 10 minutes- taste test a piece of meat to see if it is done.<br />
蓋をして、約１０分煮て、火がとおったことを確認し、お肉を味見する。必要であれば味を整える。</span></li>
<li><span style="color: #800000;">Eat away and continue to add more vegetables and sauce.  Allow to simmer.<br />

			<content:encoded><![CDATA[<p>For my friends in America, here is the sensible eating style I have learned from living in Japan. Yes, it&#8217;s common sense stuff that you already know, but that&#8217;s how they eat here and that&#8217;s also why they have have such longevity!</p>
<p><span style="font-size: 80%;">アメリカにいる友人にいわせれば、私が日本で学んできた食生活は「賢明」なスタイル。そうね、ご存知のとおり「食」に関しては共通の感覚があると思うの。日本人の食生活は同時に長寿の秘訣でもあるからです！</span></p>

<p>1.<strong> <span style="color: #339966;">Use &#8220;smart&#8221; fats.</span></strong> I love using olive oil in my cooking and adding a dash of sesame oil when I want a slightly bolder taste.  The typical Japanese diet is very low in &#8220;bad&#8221; saturated fats and much higher in the &#8220;good&#8221; fats that come from seafood, etc.</p>

<p>2. <strong><span style="color: #339966;">Bread &#8211; it&#8217;s great, but know when to stop!</span></strong> The Japanese love to eat all types of bread like everyone else, but they know when to stop eating it &#8211; that&#8217;s the secret!  If you love eating breads, try to choose whole grains as much as possible. Whole grains have their bran intact and have more fiber, B vitamins and other healthy nutrients.</p>

<p>3.  <strong><span style="color: #339966;">Eat more vegetables and fruits!</span></strong> In Japan there&#8217;s an abundance of vegetables, but the selection of fruits is more limited. As a child growing up in Costa Rica, I remember the delicious fresh fruit salads that my Grandmother made and ever since then, I can never get enough fruits. Living in Japan I have adapted to what is available here and one thing I definitely love is their delicious strawberries!</p>

<p>4. <strong><span style="color: #339966;">Trade some meat for fish instead!</span></strong> Meat is a great source of protein but it’s also a big source of fat in many people’s diets, so eat small amounts of lean meat and have fish more often. The Japanese actually serve some beef that has a lot of fat, but they eat it in small portions so it is not a problem. For a change, try grilling fresh fish.  Just add a little savory seasoning and you may find that you prefer it more than steak!</p>

<p>5. <span style="color: #339966;">L<strong>ow-fat dairy products.</strong></span> The Japanese are conscious about the amount of dairy in their diet.  Milk, cheese and yogurt are said to be good sources of calcium, but just keep in moderation. If you think about it, where does the calcium actually come from that goes into the milk? The cow gets it from eating her grass and vegetables &#8211; so you should do the same!</p>

When dishes are served separately, it gives your body time to absorb the nutrients and you will feel full without completely stuffing yourself! It works &#8211; try it!</p>

<p>The secret of preparing a quick healthy meal is to have a few key ingredients in your kitchen. When I find myself in a tight schedule situation I can alway reach for this recipe and know that a fresh healthy meal is on its way!  If you prepare in advance (cutting all your vegetables and place them in plastic containers or bags) this dish is a snap to make.</p>
<p><span style="font-size: 80%;"><span style="color: #008000;">手早くヘルシーな食事を作る秘密の鍵はキッチンにある食材を揃えておくこと。私はスケジュールがきつい時にこのレシピを選ぶの。そして、やっぱりこれはバランスがいいって感じるの！あらかじめ用意しておけば（野菜を全部切っておいて、ジップロックバックやタッパーに入れておけば）あっという間にできあがりよ。</span></span></p>

<p>Ingredients Serves 4-6 people</p>
<p>5-6 slices of bacon (substitute shrimp, chicken, or pork if you like)<br />
1 Tbs. sesame oil<br />
1 large onion, sliced<br />
1-2 cloves of garlic, minced<br />
2 carrots, sliced<br />
2-3 green peppers, sliced (add color by using red &amp; yellow)<br />
3 scallions, finely sliced<br />
Salt &amp; Pepper<br />
½ Chinese cabbage or 1 small cabbage head, shredded or torn<br />
3 packages precooked soba noodles<br />
Soy sauce <br />
Mirin (sweet rice wine) (optional)</p>
<p>Tip: Add more vegetables to add more flavor and nutrients to your dish, bean sprouts and soy beans <em>(optional</em>)</p>
<p><span style="font-size: 80%;"><span style="color: #008000;"><strong>【材料】</strong><strong> </strong></span><span style="color: #008000;"><strong>４～６人分<br />
</strong>・ベーコン５～６枚（他にも代用として、エビ、鶏肉、豚肉など使えます。）<br />
・ごま油　大さじ１<br />
・たまねぎ　大１個<br />
・にんにく　１～２かけ　みじん切りにしておく<br />
・にんじん　２本　スライスしておく<br />
・ピーマン２～３個　スライスしておく (赤と黄色のパプリカを使うと彩りがきれいよ)<br />
・ねぎ　３本　小口切り<br />
・しお、コショウ　適量<br />
・はくさい（小さいもの）　½個　又はキャベツ（小さいもの）１個　手で千切るか、一口大に切っておく。<br />
・焼そばの麺　３袋<br />
・しょう油　適量<br />
・（お好みで）みりん</span></span></p>
<p style="text-align: center;"><span style="color: #008000;"><span style="font-size: small;">ヒント：もっとフレーバーを足したい時や栄養バランスをよくしたい時は、他の野菜（もやしや枝豆など）を加えてね。</span></span></p>

Directions:【作り方】<br />
1. In a large skillet, at med-high heat cook bacon until brown but still soft.  Remove chop into bite size pieces.  Set aside.<br />
<span style="font-size: 80%;"><span style="color: #008000;">大きなフライパンを強めの中火にかけてベーコンを軽く色がつくまで炒めます。焼けたら取り出して一口大に切っておきます。<br />

2. In the same pan (along with the cooked bacon oil) add 1 tsp sesame oil and onions, sauté for 2-3 mins.  Add garlic sauté together. <br />
　<span style="color: #008000;"><span style="font-size: 80%;">ベーコンをいためたフライパン（油をそのまま残しておく）にごま油大さじ１とたまねぎを入れて２～３分ソテーします。そのあとみじん切りにしたにんにくを加え一緒にソテーします。<br />

3. Add carrots, onion, and green bell peppers in the skillet and stir-fry for a couple of minutes.  Saute some more, sprinkle salt &amp; pepper. Toss and mix well.<br />
　<span style="color: #008000;"><span style="font-size: 80%;">にんじん、ねぎ、ピーマンを加えさらに炒めます。塩こしょうで味をつけ、よく混ぜて味を均一になじませます。<br />

4. Add cabbage, then soba noodles continue to fold and mix together. Drizzle a little sesame oil, add 3-5 tablespoons of soy sauce, and 2 teaspoons mirin on top.  Mix more.<br />
　<span style="color: #008000;"><span style="font-size: 80%;">白菜（またはキャベツ）を加え、麺をほぐしながら入れてよく混ぜます。油が足りなければごま油（分量外）をもう少し加え混ぜます。しょう油大さじ３～５、みりん大さじ２を加えてよく具と麺に絡めます。</span></span></p>
<p>5. Add bacon pieces then taste until perfection. Add more soy sauce and other sauces and seasoning if needed. Serve hot with rice &amp; chopsticks<br />
　<span style="color: #008000;"><span style="font-size: 80%;">１で切っておいたベーコンを戻してから味を整えます。お好みでしょう油または焼きそばソースなどを加えてください。熱々のうちにご飯を添えて、おはしでどうぞ。</span></span></p>
