When Lisa PCS&#8217;d, my company sponsored the site to keep it alive as a service to the community, because the information was so helpful to so many people.</span></p>

<p><span style="color: #993300;">This was one of my parents favorite meals when they visited Japan.  &#8221;This yaki-stuff is delicious and it fills you up completely!&#8221;  My Dad said with great big smile and sauce all over his face!  (Must admit it is one of my favorites too!)</span></p>

<p><span class="Apple-style-span" style="color: #993300;">A tasty &#8220;pancake/crepe&#8221; contains a variety of flavorful ingredients made to order to your liking!  The name comes from the word okonomi, meaning <em>&#8220;what you want</em>&#8220;, and yaki means &#8220;grilled&#8221; such as yakitori (grilled chicken) and yakisoba (grilled soba noodles).</span></p>
<p><span style="color: #993300;">Okonomiyaki is associated with two major cities; Osaka and Hiroshima, however it can be found anywhere in Japan.   Toppings and batters tend to vary a little, however this blog entry will show you step-by-step in how it&#8217;s made <em>Hiroshima style</em> &#8211; which happens to be my favorite!</span></p>
<p><span style="color: #993300;">In Hiroshima, the ingredients are layered rather than mixed all together like the Osaka style (see picture below), very simliar to an omelette.</span></p>

<p><span style="color: #993300;">The layers are typically batter, cabbage, pork/bacon, and optional items such as shrimp, squid, octopus, and cheese.   Noodles, you can choose from two types; soba (thin noodles) or udon (flat and thicker).  To top it all off a yummy fried egg and a generous amount of okonomiyaki (barbeque) sauce and sprinkle of aonori (seaweed) flakes.  </span></p>

<p><span style="color: #008000;">I had the pleasure of visiting the newest Italian restaurant in Yanai. I thought the name was a little odd; &#8220;<strong>Kazu Hana</strong>&#8221; doesn&#8217;t sound like an Italian place to me, but don&#8217;t let that fool you &#8211; this little restaurant serves wonderful Italian dishes! </span></p>
<p><span style="color: #008000;">It&#8217;s a cozy, clean, warm and inviting place that is perfect for anyone who just wants to relax and eat plenty!  Informal and friendly, with a chef who is proud of his signature dishes!  The only drawback is they speak very little English and the menu is in Japanese only &#8211; but they do have some pictures on the menu and the staff is very helpful, so you shouldn&#8217;t have any problem ordering something delicious!.  We had several dishes to try and trust me, everthing tasted fantastic! The talented young chef is Gokan Tomoharu from Hyōgo (兵庫県, near Kobe) and he can really cook! </span></p>

<p><span style="color: #800000;">Hidden around the side of a wonderful smelling restaurant called Osamurai-jaya Hikoemon お侍茶屋　彦右衛門,  you will find a cute waffle stand called &#8220;Setono Hanayome Taiyaki.&#8221;</span></p>

<p><span style="color: #800000;">The Japanese dessert menu is simple and easy to understand.  There were several different flavors to choose from such as Mango Cream, Vanilla Custard, Chocolate Mousse, Fresh Fruit Mixed and Strawberry with Cream &#8211; which they were all sold out of!  I guess it&#8217;s a favorite with the locals.</span></p>

<p><span style="color: #800000;">A little more information about Osamurai-jaya Hikoemon &#8211; the restaurant opened this year (2010) and there are three sections to enjoy;  a traditional Japanese restaurant, dessert stand, and a small omiyage gift shop.  I didn&#8217;t get a chance to visit the restaurant (my focus on this hot day was desserts!) but I could smell their famous curry udon soup!  What an incredible aroma!  I will return in the near future and enjoy ordering from their wonderful menu, can&#8217;t wait for that!  More to come! </span></p>

<p><span style="color: #000000;"><span style="color: #000080;">If you enjoy sushi, you&#8217;re in the right place; and if you&#8217;ve never tried it, maybe you should have it at least once or twice.  That&#8217;s what I did and now I am hooked! </span><em><span style="color: #000080;">(No punn intended</span></em><span style="color: #000080;">)  In Japan, sushi restaurants are literally everywhere!  Many different kinds of restaurants in Japan serve sushi, ranging from fancy restaurants to simple establishments that treat it almost like a fast food snack.  Many people, when they first visit Japan, are surprised as to how many kinds of sushi are actually available, unlike other countries where there is only a very simple and limited variety. </span></span></p>

<p><span style="color: #000080;">The various noodle dishes that are popular in Japan are another culinary experience that shouldn&#8217;t be missed.  Ranging from the familiar ramen-style noodles, to the Japanese udon noodle which is much thicker; you&#8217;ll find that noodles are prepared in many delicious and interesting ways. There are also fried noodle dishes such as yakisoba, which is an absolute favorite for many Americans.  This popular dish is generally served with a vegetable and meat combination, along with a a tangy brown sauce.  Also okonimiyaki is another foreigner favorite, I know it was for my parents when they visited Japan!  It is served in two ways; Hiroshima style (layered like a light pancake omlette &#8211; personal favorite) or Osaka style (all mixed up together like a giant western omlette). </span></p>
<p><span style="font-size: 80%;"><span style="color: #000080;">いろいろな種類の麺類にチャレンジしてみることも、外せない美味しい経験ですね。ラーメンのようなスタイルの麺から少し太めのうどんのような麺、いろいろな調理方法で調理されます。また、多くのアメリカ人の大好物「焼きそば」のような炒めた麺料理もあります。焼きそばは野菜、肉、麺を炒めて少し濃い目の茶色いソースで味付けをします。「お好み焼き」も外国人に好まれるものの一つですね。うちの両親も大好きです！調理方法には広島風（クレープのような生地の上に具材を重ねるもの）と大阪風（生地と具材をすべて混ぜて焼くもの）の２種類があります。</span></span></p>

These Korea-influenced style of restaurants let you do some of the cooking yourself.  You simply choose your meats and then you can cook them yourself at the table on a grill that is built right into the table. You can then dip the cooked meats in tasty sauces and enjoy.</span> </span></p>

<p style="text-align: left;"><span style="color: #003300;">Technically the word &#8220;sushi&#8221; refers to the <strong>rice</strong>- not the actual finger sized cut fish or shellfish.  The breakdown of the Japanese word, &#8220;su&#8221; means vinegar and &#8220;shi&#8221; is from meshi (the Japanese word for rice) &#8230;.so, there you have it vinegared rice!  酢飯</span></p>
<p style="text-align: left;"><span style="color: #003300;">I know that a I&#8217;m no expert on the subject, but I do know fresh sushi when I see it &#8211; clean, colorful, and ordorless.  Plus when it comes to enjoying sushi it&#8217;s extremely important that the restaurant you are eating at is clean, takes pride in their &#8221;qualified&#8221; staff, and has a good reputation.</span></p>
<p style="text-align: left;"><span style="color: #003300;">Alrighty let&#8217;s move on&#8230;</span></p>
<p style="text-align: left;"><span style="color: #003300;">Sushi has been around for a long period of time -1,800 years&#8230;give and take a few years- and Western influences has uniquely personalized the  simple Japanese dish.  They took the traditional basic ingredients and infused new flavors and styles, such as California rolls, Phili rolls, or the Caterpillar rolls just to name a few.  Totally cool and all very yummy for our taste buds.</span></p>
<p style="text-align: left;"><span style="color: #003300;">There are a number of sushi styles that most people feel comfortable when ordering their favorite delicate treat, let&#8217;s take a quick look of the most common types.   Again, I&#8217;m just teaching the <strong><em>basics</em></strong>&#8230;</span></p>
<p style="text-align: center;"><span style="color: #003300;"> </span><strong><span style="color: #ff0000;">Maki (maa-key) Sushi 巻き</span></strong></p>

<p><span style="color: #003300;">Maki sushi is a roll of fish/seafood with rice wrapped in nori (seaweed).  Two variations of the maki sushi are: Futomaki  &#8220;fat maki&#8221;, a much bigger form of this type usually made with two or more different fillings.   Hosomaki &#8220;thin maki&#8221;, made with only one filling, usually fish or seafood, but it can also be served vegetarian.</span></p>
<p style="text-align: center;"><strong><span style="color: #ff0000;">Nigiri (nee-gie-ree) sushi  握り</span></strong></p>

It can served with a slice of raw fish, or seafood, cooked egg, or other toppings.  Traditionally the fish is lying on a &#8220;thumb sized&#8221; chunk of sushi rice, with a tiny amount of wasabi between the two. </span></p>
<p style="text-align: center;"><span style="color: #ff0000;"><strong>Uramaki</strong> <strong>(oo-ra-ma-key)</strong> <strong>Sushi  裏巻</strong></span></p>
<p style="text-align: left;"><span style="color: #003300;">This &#8220;inside out sushi&#8221; is similar to <em>maki sushi</em>, except that the rice is on the outside of the seaweed (nori), and it is usually prepared with more than two fillings &#8211; for example salmon, cucumber and whatever else you like!   It&#8217;s sometimes topped with a thin slice of fish, seafood, or avocado. </span></p>

<p><span style="color: #003300;">Here are another few terms you&#8221;ll hear when it comes to other sushi styles while traveling throughout Japan:</span></p>
<p><span style="color: #003300;">Bara Sushi – The vinegar rice and ingredients are mixed as a salad</span></p>
<p><span style="color: #003300;">Chirashi Sushi- Not often seen in sushi restaurants outside of Japan.  It refers to a bowl of rice topped by several layers of sashimi.</span></p>
<p><span style="color: #003300;">Oshizushi – Vinegar rice and other ingredients of choice pressed into a &#8220;mold&#8221; of some sort.</span></p>
<p><span style="color: #003300;">In my hometown of Iwakuni, we have our personal sushi dish called &#8220;Iwakuni-zushi&#8221; or &#8221;tonosamazushi&#8221; meaning &#8220;lord&#8217;s sushi.&#8221; </span></p>

<p style="text-align: left;"><span style="color: #003300;">I know it&#8217;s not served like the others sushi styles, but it&#8217;s considered to be a part of the sushi scene.  The word <em>sashimi</em> means &#8220;pierced seafood body&#8221; and is served <span style="text-decoration: underline;">without</span> rice.  Its fresh clean form makes this a healthy and desirable alternative to red meats. <em>(I know&#8230;I can&#8217;t believe I&#8217;m saying that!)</em> </span></p>
<p style="text-align: left;"><span style="color: #003300;">As a matter of fact, sashimi could be enjoyed as a starter or as the main course in the meal, it is generally is served with wasabi (green spicy paste), used with the compliments of soy sauce to make a tasty and distinct hot flavor dipping sauce.   I&#8217;ve also heard the use of wasabi with sushi was also to kill parasites that could be present in raw seafood.  Hummm&#8230;still checking to see if that&#8217;s true. </span></p>
<p style="text-align: left;"><span style="color: #003300;">Okay, I think I&#8217;ve talked enough about Sushi 101 &#8211; h</span><span style="color: #003300;">opefully I was able to clarify some of the mysteries behind the different types of sushi served at your favorite Japanese restaurant. </span></p>
<p style="text-align: left;"><span style="color: #003300;">If you&#8217;re still hesitant -please give sushi a chance, there is no doubt that sushi may become your next favorite food. Who knows&#8230; maybe you&#8217;ll start making them at home!</span></p>

			<content:encoded><![CDATA[<p><span style="color: #000080;">When you are living overseas, eating out can be one of the most exciting enjoyments of your travel!   I say go and explore, embrace the culture and everything that goes with it! <em><span style="color: #800000;"><strong>Life&#8217;s short, live it up!</strong></span><strong> </strong></em>Japanese restaurants is a great place to learn the basic language and try many new cuisines at the same time.   Here are a few phrases (broken down for pronunciation, not necessarily spelled this way) you can quickly learn&#8230; not only will you impress your friends but the staff too! </span></p>

<p><span style="color: #000080;">When entering  a restaurant the employees will greet you with loud</span> <span style="color: #ff0000;">“<strong>ee</strong>-<strong><em>ra-shai-ma-say!</em></strong>” </span><span style="color: #000080;">which means &#8220;welcome to our place/establishment!&#8221;</span></p>
<p><span style="color: #000080;">Return with  a smile and answer back with</span> <span style="color: #ff0000;"><strong><em>“Kon-ni-chi-wa</em></strong>”</span> <span style="color: #000080;">or</span> <span style="color: #ff0000;">“<strong><em>Kon-ban-wa</em></strong></span>”<span style="color: #000080;"> if you are heading out for the evening.  Next you&#8217;ll be shown to your seat or booth, then a menu will be offered.</span></p>
<p><span style="color: #000080;">To ask if they have an English menu ask</span> <span style="color: #ff0000;">&#8221; <em><strong>Men yū o eigo ga ari mas ka</strong></em>?&#8221;</span></p>

<p><span style="color: #000080;">It&#8217;s always good to ask and if they don&#8217;t, don&#8217;t worry you will find something yummy to eat.  Most places have pictures or plastic food models to choose from.  I love this concept and I will talk more about that in a later blog&#8230;.</span></p>

<p><span style="color: #000080;">Next, signal the waitress with your hand when your ready and say </span><strong><span style="color: #ff0000;">“<em>Su mi ma sen, oh-da one gai shi mas”</em></span></strong> <span style="color: #000080;">(Excuse me/we are ready to order) then say</span> <span style="color: #ff0000;">&#8220;</span><strong><em><span style="color: #ff0000;">finished</span>&#8220;<span style="color: #000080;"> </span></em></strong><span style="color: #000080;">or</span><strong><em> <span style="color: #ff0000;">&#8220;okay</span></em></strong><span style="color: #ff0000;">&#8220;</span> &#8211; <span style="color: #000080;">they all understand these universal words.</span></p>
<p><span style="color: #000080;">Yippee the food arrives, <em>now what?</em></span></p>
<p><span style="color: #000080;">Once everyone has their food, you politely can say</span> <span style="color: #ff0000;">“<em><strong>eei ta da ki mas</strong></em>”</span> <span style="color: #000080;">when you’re ready to eat, ( a traditional custom, place your hands together like your saying grace at the table )  This means that you are about to start eating this wonderfully prepared meal. </span></p>
<p><span style="color: #000080;"><strong><em>Flashback:</em></strong> w</span><span style="color: #000080;">hen we first arrived to Japan my kids had a hard time learning the language so they cheated by saying</span> <span style="color: #ff0000;">&#8220;<em><strong>Eat this food we must</strong></em></span>&#8220; <span style="color: #000080;"> really fast, it was cute and it worked.   Now they know better&#8230;</span></p>

<p><span style="color: #000080;">Hopefully you are enjoying the meal and it&#8217;s very tasty you can say, <span style="color: #000000;"><em><strong><span style="color: #ff0000;">“Oi shii!”</span></strong></em> <span style="color: #000080;">which </span></span>meaning dee-licious! </span></p>
<p><span style="color: #000080;">Here are some other useful words when eating out or what you will hear other Japanese people saying at the table about their food&#8230;.</span></p>
<p><span style="color: #ff0000;">A mai &#8211; <span style="color: #000080;">sweet  &#8212; </span>Ni gai &#8211; <span style="color: #000080;">bitter  &#8212; </span>Sup-pai &#8211; <span style="color: #000080;">sour  &#8212; </span>Shi op-pai &#8211; <span style="color: #000080;">salty</span><span style="color: #000080;"> &#8211;</span> <span style="color: #000080;"> <span style="color: #ff0000;">Ka</span></span><span style="color: #ff0000;">rai</span> &#8211; <span style="color: #000080;">hot, spicy  &#8212; </span>At sui &#8211; <span style="color: #000080;">it&#8217;s hot  &#8212; </span>Tsu metai &#8211; <span style="color: #000080;">it&#8217;s cold</span></span></p>
<p><span style="color: #000080;">After your table starts looking like everyone has finished a waitress may walk over and asks </span> <span style="color: #ff0000;"><em><strong>&#8220;ta beo ema shita</strong> <strong>ka?&#8221;</strong></em> </span><span style="color: #000080;">(Are you finished?)  &#8220;Yes&#8221; or</span> <span style="color: #000080;">&#8220;no&#8221; will do.</span></p>
<p><span style="color: #000080;">When you are completely finished with your meal you can say</span>, <strong><em><span style="color: #ff0000;">“go ji so sama de shi ta</span><span style="color: #ff0000;">”</span></em></strong> <span style="color: #000080;">with a slight, polite bow as you are leaving.   This means you are done and appreciated the meal.   Proudly say this to the server and to the chef,  this will impress them and you&#8217;ll make them feel</span><span style="color: #000080;"> very happy</span><span style="color: #000080;"><span style="color: #000080;">!</span> I also like to add </span><strong><em><span style="color: #000080;">“</span><span style="color: #ff0000;">oi shi katta</span><span style="color: #000080;">,”</span></em></strong> <span style="color: #000080;">meaning “it was tasty!</span>”</p>
<p><span style="color: #000080;"><em>Planning to come back again?</em> </span></p>
<p><span style="color: #000080;">Say</span>, <span style="color: #ff0000;"><em><strong>“mata ki mas</strong></em>”</span> <span style="color: #000080;">and don&#8217;t forget to say</span> <span style="color: #ff0000;">&#8220;<strong><em>domo ari gato go zai masu</em></strong></span>” <span style="color: #000080;">on your way out.   It&#8217;s always polite</span> <span style="color: #000080;">to thank them very much for their kind services.</span></p>
<p><span style="color: #000080;">I hope this helps you familiarize yourself to eating out in Japan and making a great impression.   I feel it&#8217;s important to show gratitude to the employees especially the chef&#8230;believe me a little kindness goes a long way and your food will taste even better next time! </span></p>

<p>I visited a new cozy restaurant located in the Minami Iwakuni area, just behind NAFCO, across from Bulldog store.<br />
<span style="font-size: 80%;"><span style="color: #888888;">南岩国のナフコの近く、万惣の道を挟んだところにある、昨年できたばかりの新しいレストランに行ってみました。</span></span></p>
<p>As you enter, the friendly staff greets you with their warm smiles and hello&#8217;s.  The atmosphere is warm and elegantly simple, with earth tone colors and clean lines.   The layout is intimate with 8-9 tables; seating about 35 comfortably.<br />
<span style="font-size: 80%;"><span style="color: #888888;">店に入るとすぐにフレンドリーなスタッフが迎えてくれます。エレガントなシンプルさのある雰囲気のアーストーンのカラーで統一されたきれいなレストランです。８～９個のテーブルがあり約３５名分の席があります。</span></span></p>
<p>The menu is primarily Italian and French, with a good selection to choose from.  Their set menu prices vary from Y1,000 to Y2,300 for lunch and Y2,300 up towards Y8,000 for dinner &#8211; it just depends on your appetite. Also, there is an English menu for lunch, but not for the dinner menu.<br />
<span style="font-size: 80%;"><span style="color: #888888;">メニューはイタリアン・フレンチ。価格帯はランチで１０００円～２３００円、ディナーで２３００円～８０００円。　英語のメニューはランチのみ準備されています。</span></span></p>
<p>They are open every day from 11:30 to 2:00 pm for lunch and 6:00 to 9:30 pm for dinner; except on Monday&#8217;s they are closed for dinner.  They do however have a Trios Coffee &amp; Dessert special, Monday only, from 2:00 to 5:00 pm. There is plenty of parking and reservations are recommended on Friday and Saturday nights. Phone: 0827-32-9500.<br />
