Perfect Salmon Cakes

Very quick, very easy to make! A simple, delicious, and nutritious way of serving salmon – even if it is from a can. You can enjoy this treat with or without the dressing, in a smal bun, or with a green salad. These wonderfully tasty patties are perfect for anytime.

Ingredients:
1 canned salmon (14.5 ounces)
1/4 cup onion, minced
1 clove garlic, minced
1/4 cup cornmeal or fine bread crumbs
1/4 cup flour
1 large egg
3 tablespoons mayonanaise
1 teaspoon mustard (I used a Dijon)
Dash salt and black pepper
Oil for frying

Directions
1. Drain salmon thoroughly, flake it with a fork. If you are using fresh salmon, chop it into bits.
2. Add all remaining ingredients (except oil and mix well in a large bowl.
3. Form into patties, about the size of your palm.
4. Add oil to your frying pan and heat to medium to high heat.
5. Fry patties until golden brown, turning only once.

Serve with your favorite sauce

Simple sauce
1/2 cup mayonnaise
1/2 tablespoon mustard
A pinch of dill or cumin for an exotic flavor

Mix together well and spread!
