Thanks for the advice Salange! I appreciate the suggestion and I will have to make with coconut milk - never thought of that? Thank you for visiting the website. You love to learn more about vegan cooking!

Christa, hopefully you can still enjoy this recipe with a "Vegan Chef" at the wheel - sound tasty and yummy! I hope all is well!

I often use sweetened coconut milk. I am a vegan chef, and I find that this is a good substitute, but you may have to adjust some quantities to obtain the correct texture.

Dear Jackie,
That recipe sounds wonderful, I just can't have the sweet condenced milk.
What could I substitute???
All my traditional recipes - like muffins - I have to substitute ingredients. It works perfect with what I replace.
Maybe you can come up with something for your recipe??

For instance,I substitute
oil with unsweetened applesauce,
sugar with 'Splenda'
eggs with egg whites,
white flower with whole grain-whole wheat flower,
just increase the bakingpowder and baking soda, have to 'play' around a little!!!
If adding dried fruit, I am always a 'little' more generous.
Just printed a lot of your recipes yesterday, that would be suitable for my food intake, can't wait to try them.
Thanks for 'sharing'.
